Oh, So Cheesy Slow-Cooked Naughty Nachos!

As some extremely wise person said: “Life without Mexican food is no life at all”.  And of all Mexican food, nachos truly make my toes sparkle. There is just something about the combination of crunchy corn chips, slow-cooked mince, too much melted cheese (too much…as if!), homemade guacamole and salsa, with sour cream…that makes my heart pump sparkles. And if you are an adult and partial to alcohol – a bit of tequila goes down amazingly well with super cheesy nachos (hence, the naughty in the title).  

 

A few notes before we sparkle Mexican style:

 This Nacho’s Recipe is always a crowd favourite! But please take note you will need a slow-cooker for this one.

 For a vegetarian favourite of this Recipe – ditch the mince, up the cheese and add flavoured cream cheese and salsa to the body and Ay Caramba… you have just as yummy results.

In the words of Speedy Gonzales ¡Arriba, arriba! ¡Ándaleándale! Let’s get going on the recipe…

 

 

Cheesy Naughty Nacho Ingredients:

 

 Finely chop the onion, drain and rinse the red beans, chop the green pepper (or rinse pea-corn mix) and mince the garlic.

 

 

 Heat the canola oil in a large skillet on a high heat; add the beef mince and brown. Once it is no longer pink, add the onion and garlic – cook until soft. Season with salt and pepper. Add this to the slow-cooker.

 

 

 Add the tinned, diced tomato, tomato paste, green pepper/tin of pea-corn mix, beans, chilli flakes, cumin and brown sugar to the slow-cooker. Pour the warm beef stock over the top. Cover and slow-cook on high for 3-4 hours or on low heat, for 6 hours. Season at end.

 

 

  Grate all the cheese (separately). If you decide to make your own guacamole and salsa – now is the time, while the mince is cooking. See the mini-recipes below.

 

 

  Once the mince is ready, pour half of the corn chips in an oven dish and sprinkle a fair amount of the cheddar cheese over it. Add some of the mince on top. Pour the rest of the corn chips on top of this and then add more mince. Mix the cheddar cheese with the white cheddar or gouda and pour over the mince. Place this in a 200˚ C oven until the cheese is melted.

 

 

 

 Once removed from oven – serve the cheesy nachos with all the trimmings.

 

 

Guacamole is super easy to make – but if you are in a rush, it’s even easier to buy. Most supermarkets sell  “guac” in many different flavours. But alas, it’s always tastier to make your own and therefore please see the simple recipe below.

 

 

Let’s be serious – nothing is as sassy as salsa. Once again it’s always easier to buy but tastier to make. But if you just don’t have time, don’t be hard on yourself – life is too short to cry about salsa.

 

 

Nachos are best enjoyed with close friends and/or family. Or if you have extra nachos and loads of cheese, it’s best enjoyed… alone with a good book and a cosy couch or bed.

To activate the naughty in this recipe – enjoy with a tot of chilled tequila (try a slice of grapefruit or orange instead of a lemon for a sparkle twist). Remember one tot – nobody likes a tequila dispenser.
